Snicker Snackers
These are instant treats. Because they are not baked, they contain plenty of enzymes, sterols and sterolin. There are so many variations on this original recipe. When out of one of the ingredients, you can substitute ground pumpkin seeds, almond, cashews, finely chopped dates or raisins. A drop of vanilla or a pinch of cinnamon will give these treats a new twist. Choose seeds and nuts that are raw, unsalted and not roasted.
½ cup sunflower seeds
½ cup sesame seeds
3 Tbsp honey or agave
½ cup nut butter (cashew, pumpkin almond or a mixture)
½ cup unsweetened carob powder
¼ cup oat bran or wheat germ
¼ cup unsweetened coconut
Add the ingredients one at a time and blend in a food processor until the mixture forms a ball. Pinch off small amounts and form into bite-size balls. For a special effect, roll in extra sesame seeds or coconut. Store in air-tight container and refrigerate.
Makes 24 bite-size balls.
