Spinach Poached Eggs

Time To Prepare: 
10 minutes
Ingredients: 

1 large handful of fresh organic spinach

3 sliced cremini mushrooms

1/4 diced red pepper

1 teaspoon extra virgin cold-pressed olive oil

dash of cayenne pepper

2 poached eggs

Directions: 

Lightly poach 2 free-range organic eggs.

Toss spinach, vegetables and olive oil and place on plate.

Add poached eggs on top.

Simple, easy and nutritious!
